Getting clean copy into a code editor
Pasting from Word carries styling that then has to be stripped. Converting first gives text that arrives as text, with no hidden characters.

Word documents carry an enormous amount of invisible baggage - style definitions, revision identifiers, language tags, list numbering, theme references - and when the text is destined for a code editor, a database field, a translation tool or a plain email, all of it is in the way. Copying from Word into another application is notoriously unreliable for exactly this reason: what looks like plain text on the clipboard often arrives carrying fonts, colours and spacing that then have to be stripped out by hand. This reads the document at the file level and returns only the words. No markers, no syntax, no residue. Tables come through as tab-separated rows, which is the one concession to structure, because that form pastes straight into a spreadsheet.

Convert, then paste into the word counter. Word's own count includes text boxes and sometimes headers, which is why the two figures often disagree.
Because the clipboard carries rich formatting alongside the text, and most applications accept it. Converting the file gives you text with nothing attached.
Their text is, but not their formatting - a heading becomes an ordinary line. Use the Markdown converter if you need the structure marked.
Each row becomes one line with tabs between the cells, so it pastes directly into a spreadsheet.
Footnotes, headers and footers are stored in separate parts of the file and are not part of the document body this reads.
No. It is unpacked and read in this tab, which matters for the contracts and drafts people usually need this for.
